have more in-depth invoices that give the parents a better picture of how much the insurance is covering vs. the cost they are actually paying. Similar to when you get a medical bill it could show what the actual cost of a part is then show the amount the insurance is covering with the final total due to the parents/students.

This is already possible! We have a few options that you can use to make this work.
Firstly, make sure the actual cost is shown on the part: https://docs.manage1to1.com/kb/invoice-management-tab/
Next, you can "add a payment" to an invoice from the payment type of "insurance"
This will result in the invoice being shown with the details you are wanting; the true cost of the part, the cost the school is charging, a partial payment showing insurance, and the remaining balance.
